Origin and characteristics:
It is believed that the first tomatoes were found in South America and exported to Europe sometime during the sixteenth century, where they were cultivated in regions with decent amount of sun throughout the year.
It was in Italy where sundried tomatoes could have been originated, as a result of looking for a way to be able to eat tomatoes during the entire year without using refrigerators.

One of our favorite recipes is the sundried tomato pesto and pasta. To get the pesto sauce right, you only need to mix sundried tomatoes, parmesan cheese, garlic, pine nuts and basil in a food processor and keep adding olive oil until the paste becomes smooth.
Once you had cooked the pasta, keep a three quarter cup from the drained water to add to the pesto paste which will be added to the pasta. Very quick and easy!
