Origin and characteristics:
The origin of Corn goes back to around 2500BC, and was said to have first been grown throughout the Americas. In the late 15th century trade between Europe and the rest of the world began because of the ability to grow Maize in diverse climates.
Baby Corn comes from the same seed as standard corn however is harvested earlier in the process while the ears are small and immature.
Season:
Baby Corn is most commonly available between the June to October months however can generally be found all year round.

Serves: 6
Prep Time: 15 Mins
Cooking Time: 25 Mins
Ingredients: 8 Cups fresh Corn Kernels, 6 Cups of Water, 1 tablespoon Salt, 1 Liter Milk, ¼ cup fresh chives, sour cream.
Preparation
Bring a large pot of salted water to the boil. Add the corn and let simmer for 20 minutes or until soft. Blend the mixture in a blender or food processor until very smooth. Re-heat the soup in a large saucepan and add milk until reaching the desired thickness. To add flavour serve topped with a dollop of sour cream and sprinkled with chives. May be served hot or cold.
